I don't like to spend time cooking, and am not a foodie. However, after spending time in Denmark and Norway, I have to say I love Nordic food. This cookbook has some great recipes. There are lots of simple recipes for open face sandwiches, soup, and other foods, and is filled with ideas I can use to eat healthy great meals without hours of preparation. Some recipes do take more effort- for example two versions of Scandinavian rye bread (which is nothing like the rye bread in a typical grocery store- as it is more moist and flavorful). Even though this cookbook gives the authentic time-consuming version, and a simpler less time-consuming version, I still prefer to skip making my own bread. I looked around for a local store that carries a similar tasting rye bread, which I found in a specialty section of an upscale grocery store. But for those without access to specialty stores, or who like to spend time in the kitchen, this cookbook has the recipes to give the full Scandinavian flavor. For those who like great healthy food, with simple preparation, this cookbook has that too.
